  白菜丝炒干豆腐
主 料
白菜2500克,干豆腐1000克。
调 料
油150克,酱油、盐、葱、姜、味精适量。
做 法
(1)白菜去掉老帮和叶,洗干净顺着纤维切成4厘米
长的丝,再将干豆腐也切成相应的丝,放开水锅内烫一下,
然后用凉水投凉,控净水分。
(2)将锅放火上加油烧热。用葱、姜、酱油炸锅后,
放入白菜丝用急火煸炒,至上色入味时下干豆腐丝,加精
盐、味精及调味油,出锅装盘。
