  锅塌西红柿
主 料
西红柿300克,冬笋、豌豆各5克,鸡蛋2个。
调 料
面粉25克,粉芡15克,味精2.5克,盐10克,香油10克,
葱、姜共15克,豆油60克。
做 法
(1)将鸡蛋打碗内,西红柿洗净,横片成0.66厘米厚
的片,两面粘上面粉,再放鸡蛋碗内拖蛋糊。
(2)锅放火上添入油,油热时将拖糊的柿片下锅煎,
并轻轻晃动锅,煎至金黄色时,翻个再将另一面也煎成金黄
色,随撒人葱、姜丝、冬笋、豌豆,大翻锅后,加汤半勺,
再放人盐,味精,勾入流水芡,淋人香油,再翻个身即可食
用。
此菜色呈金黄,酥嫩鲜香。
