  清蒸鸡
主 料
嫩母鸡1 只(重1000克),冬笋片、口蘑片、火腿片各
15克。
调 料
绍酒40克,盐10克,大葱1段、姜、块。
做 法
(1)鸡宰杀后,由背部开膛整理好,剁去爪、嘴,用
开水汆烫一下,放入盆中,加葱段、姜块、绍酒、白糖、
盐,添汤上屉蒸至酥烂,取出放入汤碗中。
(2)拣出葱姜,将鸡汤倒人炒勺中烧开,调好口味,
撇去浮沫,加味精浇在盛鸡的汤碗中上桌。
